Translated as “white sausage” this is a Bavarian speciality, eaten poached and not fried, served with sweet mustard, a pretzel and of course weissbier (wheat beer).
We dry cure our Berkshire bellies slowly with minimal sugar, before rolling and tying them as you would pancetta. Taste bacon in its purest form, unsmoked.
Whole muscle Wagyu, butchered in-house, minced just right. Vacuum sealed for your convenience.
While Wagyu beef is known for its high marbling in cuts such as Ribeye and Striploin, there are other working muscles which develop great flavour and sometimes with that marbling. These are not your steak cuts, but well suited to be stewed.
Red chillies and shadon beni make our version of Merguez far from mild.
