While Wagyu beef is known for its high marbling in cuts such as Ribeye and Striploin, there are other working muscles which develop great flavour and sometimes with that marbling. These are not your steak cuts, but well suited to be stewed.
Whole New Zealand lamb shoulders, trimmed in-house, minced just right and pressed in the perfect 5oz portion. Vacuum sealed for your convenience.
Lamb fat is slowly rendered then filtered to remove any solids.
A little bit sweet, a little bit tangy and a whole lotta bacon! We’ve been eating it straight out the jar.
Our take on Black Pudding; something we’ve been dreaming of making for years! This is the Spanish style, with majority Berkshire Pork, and importantly rice.
You’ll find a mellow lamb flavour coming through as it is gently paired with rosemary and thyme and a unique breadcrumb mix with toasted seeds.
