A herb christened “blessed” in local patois, shadon beni is known by over 73 names worldwide; scientifically Eryngium foetidum to avoid ambiguity!
Usually found growing wild in the back garden of people’s homes, this herb has found itself as a staple in Trinidadian cooking.
With flavour reminiscent of cilantro, this chimichurri style pesto (one with no cheese or nuts, but with vinegar) is best enjoyed on grilled fish or meats, with pasta or cheese, as a dipping sauce and even with tomatoes for instant salsa.
